Which Honey Is Better: Sidr or Acacia?

There is no universal “better” choice. If you enjoy a deeper and more pronounced honey flavour, Sidr is likely to suit you better. If you prefer something lighter and more versatile for everyday use, Acacia may suit you better.

Does Natural Honey Crystallize?

Yes. Crystallization is a normal physical change that can occur in honey. The Codex Alimentarius Standard for Honey (CXS 12-1981) recognizes honey in liquid or crystalline form. Penn State Extension also explains that honey is a supersaturated sugar solution and that glucose can form crystals over time.

The speed and appearance of crystallization can vary with the honey's natural sugar composition, floral source, temperature and other conditions. For that reason, crystallization by itself should not be treated as proof that honey is pure or impure.

Can You Prove Honey Purity With a Home Test?

We do not recommend judging honey purity from a single home test based on thickness, crystallization, flame, water behaviour or another visual trick. Those observations are not the same as analytical testing. The Codex honey standard lists laboratory methods for factors such as moisture, sugars and the detection of added sugars.

For enXi Foods, the better long-term approach is to publish specific sourcing, handling and testing information only where we can document it. That is more useful than making a broad testing claim without showing the supporting evidence.

How Should Honey Be Stored?

Keep the jar properly closed, use a clean and dry spoon, and avoid introducing water or moisture into the honey. Follow the storage guidance on the product label and product page. A change from liquid to crystallized texture can be natural and does not by itself mean the honey has gone bad.

Important Honey Safety Note

Honey should not be given to children under 12 months because of the risk of infant botulism. The U.S. Centers for Disease Control and Prevention advises not giving honey to children younger than one year.
